What's for Dinner? Swedish meatballs and chicken

Since our wedding is a few weeks away, we've been watching what we eat. This means I haven't been baking up a storm as usual. I've tried to keep our entrées as simple and as healthy as possible. Here's what I've been cooking lately. 

 

Swedish Meatballs with Egg Noodles

I love Swedish meatballs. I've made IKEA's meatballs topped with their sauce packet in the past, as well as tried Alton Brown's recipe (which was missing something), but this recipe was a hit. By Damn Delicious, this recipe called for sour cream, beef broth, and unsalted butter to make a creamy, flavorful sauce. And the meatballs were tasty --made with 1 lb. pork and 1 lb. ground beef. I served it over egg noodles, and ate every last bite. 

 

 

Cilantro Lime Chicken over Orzo

 

Because our cilantro garden was thriving, I looked for a recipe where we could use a bunch of it and found this one: Cilantro Lime Chicken. By The Mediterranean Dish, this recipe called for chicken thighs in chicken broth, white wine, lime, and a bunch of cilantro. The spices included paprika, seasoned salt, garlic powder, pepper, and nutmeg. Cook for 45 minutes, and you have a succulent, juicy chicken dinner. I was genuinely surprised by how flavorful this dish is. I served it over orzo and with a warmed up tortilla. Yum! This will not disappoint. 

 

 

Jerk Seasoned Air Fried Chicken Legs with Cauliflower Rice

 

My easy, healthy, go-to meal these days is cauliflower rice (ready-made from Costco) with air fried chicken legs. I don't keep buttermilk around, but we normally have milk for the boys, so I use 1 cup of milk combined with 1 TBSP of lemon juice (let these two ingredients sit for about 5 minutes, it will begin to curdle) to marinate the chicken. Marinate the chicken for an hour or overnight. When I'm pressed for time, I skip the marinating part and simply dunk the chicken legs into the milk mixture, then go straight to battering them in cornstarch or flour mixed with lots of Jerk Seasoning. Pop it in the air fryer for 25 minutes at 390 degrees and flip the chicken legs halfway through. The result: yummy, juicy, healthy-ish air fried chicken.
